Wood sorrel's tart flavour and traditional cooling, diuretic and scurvy-preventing uses come from its oxalic acid and vitamin C. It is documented as a wild edible and folk remedy, but the same oxalic acid means large or frequent amounts can irritate the gut and burden the kidneys — so it is a 'nibble', not a bulk food.
